Vegetarian Ramen Bowl

1qt Vegetable Stock
1/2 cup Zip Sauce
2 Tbsp Lemongrass rough cut
1/2 cup Cilantro stems
1 cup Mushroom stems
1/2 cup Scallion stems
8 oz Ramen Noodles (blanched)
1/2 cup Scallions sliced
1/2 cup Cilantro leaves
1 cup Mushroom Caps sliced
2 ea Baby Bok Choy (Blanched)
2 ea Hard Boiled Eggs (peeled)
Combine all broth ingredients in a pot and bring to a boil.
Immediately reduce heat. Simmer for 15-20 minutes.
Strain broth and reserve hot.
Arrange noodles, mushrooms, eggs, bok choy in a bowl.
Pour hot broth over and finish with cilantro and scallions.

Smothered Cabbage / Celery

1 ea Large Head Cabbage
3 ea Celery Bunches
1 qt Vegetable stock
1/2 cup Zip Sauce
Cabbage: Remove outer layer of leaves and cut into 8 pieces keeping core in tact
Celery: Cut celery in half lengthwise and washing out all dirt thoroughly.
Mix stock and Zip Sauce and pour over either cabbage or celery arranged in a roasting pan.
Cover with plastic wrap then aluminum foil.
Bake covered @ 350F for 1 hour then uncovered for 30 minutes.

Whole Roasted Cauliflower

1 ea Cauliflower head trimmed
1/4 cup Zip Sauce
1/4 cup Extra Virgin Olive Oil
Combine Zip Sauce and olive oil. Set oven for 350F
Place cauliflower in a pan or oven safe dish.
Brush Zip Sauce oil mix liberally over entire cauliflower head.
place in oven and continue to bruc]sh drippings every 10-15 minutes.
Bake 45 minutes till center of cauliflower is fork tender.

Green Beans and Tomatoes

1 lb Fresh Green Beans
1 pint Fresh Cherry Tomatoes
1/2 cup Yellow Onion sliced
4 ea Garlic Cloves sliced
1/4 cup Zip Sauce
2 Tbsp Olive Oil
Place beans in a 1 gallon zipper freezer bag with 1/4 cup water.
Microwave on High for 2 minutes.
In a sautee pan, heat olive oil, add onions and garlic.
Sautee till translucent. Add steamed beans and tomatoes and cook 2-3 minutes.
Add Zip Sauce to finish and cook 1 minute and serve.
